The Fern Goregaon is an upscale 5-star business hotel in Mumbai known for its eco-friendly hospitality and excellence in service. We pride ourselves on delivering premium culinary experiences and are currently looking for a skilled and passionate Sr. CDP – Indian Curry to join our kitchen brigade.

Job Summary:

The Sr. Chef de Partie (CDP) – Indian Curry will be responsible for preparing, cooking, and presenting authentic Indian curry dishes while ensuring high standards of taste, hygiene, and consistency. The candidate should have strong knowledge of regional Indian cuisines, spice handling, and traditional as well as contemporary cooking techniques.

Key Responsibilities:

  • Prepare and cook a wide range of Indian curry dishes, both vegetarian and non-vegetarian, as per menu and event requirements.
  • Ensure all dishes are prepared consistently, maintaining high taste and presentation standards.
  • Supervise and support junior staff in daily kitchen operations.
  • Monitor food stock and place orders in coordination with the Sous Chef.
  • Maintain cleanliness and hygiene in the curry section, adhering to FSSAI and hotel standards.
  • Ensure timely execution of orders during a la carte service, banquets, and buffets.
  • Coordinate with other sections (tandoor, cold kitchen, etc.) for smooth kitchen operations.
  • Assist in menu planning, recipe standardization, and cost control.
  • Uphold kitchen safety protocols and reduce wastage.

Requirements:

  • Diploma/Degree in Hotel Management or Culinary Arts.
  • Minimum 5-7 years of experience in Indian curry section in a reputed 4 or 5-star hotel.
  • In-depth knowledge of Indian spices, gravies, and regional curry styles (North Indian, South Indian preferred).
  • Ability to handle high-volume operations during peak hours and events.
  • Strong leadership, communication, and time-management skills.
  • Knowledge of hygiene and food safety standards.
