Job Title: Sous Chef – Indian Cuisine
Location: Udaipur(No locals)
Department: Indian Cusine
Reporting to: Head Chef / Executive Chef

Job Summary:

We are seeking an experienced and passionate Sous Chef – Indian Cuisine to join our culinary team. The ideal candidate should have extensive knowledge of regional Indian cooking styles, a flair for presentation, and the ability to lead kitchen operations under the guidance of the Head Chef. This role is key in maintaining food quality, consistency, hygiene, and team management.

Key Responsibilities:

  • Assist the Head Chef in planning, developing, and executing authentic Indian dishes across various regional cuisines (North Indian, South Indian, Mughlai, Tandoori, etc.).
  • Supervise daily kitchen operations and ensure smooth functioning during prep and service.
  • Monitor food quality, presentation, and portion control.
  • Train and mentor junior kitchen staff in Indian culinary techniques, hygiene, and kitchen safety standards.
  • Maintain inventory levels and coordinate with procurement to ensure availability of quality ingredients.
  • Ensure all dishes are prepared in accordance with company standards and hygiene protocols (FSSAI, HACCP, etc.).
  • Innovate and update menu items in collaboration with the Head Chef based on seasonality and customer feedback.
  • Conduct regular kitchen audits and participate in cost control and wastage management.

Requirements:

  • Minimum 4–6 years of experience in Indian kitchens, with at least 1–2 years in a Sous Chef or CDP role.
  • Proficiency in handling Indian spices, gravies, tandoor techniques, and regional cuisines.
  • Culinary degree or certification from a recognized institute preferred.
  • Strong leadership and communication skills.
  • Ability to work under pressure in a fast-paced environment.
  • Good understanding of kitchen hygiene and safety standards.

Preferred Skills:

  • Knowledge of plating techniques and food presentation.
  • Experience in high-volume restaurants, fine dining, or hotel kitchens.
  • Creative flair for modernizing traditional Indian recipes.
  • Basic understanding of kitchen software for inventory and recipe management.

Candidate should not from Udaipur.
Salary: 40,000 - 50,000
