Chinese Chef – Responsibilities Location: Nehru Nagar, Belgaum Cuisine Focus: Pure Vegetarian – Chinese Core Responsibilities: Menu Planning & Development Design and curate a fully vegetarian Chinese menu (strictly no egg or meat). Introduce seasonal and Indo-Chinese fusion dishes to suit local taste buds. Chinese Vegetarian Dishes to Prepare: Starters: Veg Spring Rolls Crispy Chilli Baby Corn Paneer Chilli Dry Veg Manchurian Dry Honey Chilli Potatoes Schezwan Mushroom Fry Soups: Sweet Corn Soup Hot & Sour Veg Soup Manchow Soup Lemon Coriander Soup Main Course Gravy: Veg Manchurian Gravy Chilli Garlic Paneer Mushroom in Black Bean Sauce Schezwan Tofu Gravy Rice & Noodles: Veg Fried Rice Schezwan Fried Rice Hakka Noodles Schezwan Noodles Burnt Garlic Rice Triple Schezwan Rice Food Preparation & Cooking Prepare all dishes using only vegetarian ingredients, avoiding egg-based noodles and sauces. Maintain traditional Chinese flavors while aligning with vegetarian Indian preferences. Ingredient & Sauce Management Use only vegetarian soy sauce, vinegar, chilli sauces, etc. Ensure freshness and quality in all vegetables, sauces, and herbs used. Kitchen Hygiene & Safety Follow strict hygiene and sanitation protocols in line with FSSAI guidelines. Maintain clean workstations and ensure proper food storage practices. Team Supervision & Training Train and guide kitchen helpers and commis chefs under the Chinese section. Delegate tasks effectively and ensure daily mise-en-place is ready. Quality Control & Consistency Ensure consistency in taste, portioning, and plating. Monitor customer preferences and adapt recipes accordingly. Inventory & Cost Control Manage stock efficiently and coordinate with the purchase team. Help in controlling food wastage and managing food costs smartly. Customer Experience (If Required) Take feedback on Chinese dishes from customers and suggest improvements.
