Commi 1 Chef (Senior Line Cook) Role: Take charge of main dishes and run your own kitchen station. Main Duties: Cook our signature dishes: Phở (chicken, pork, buff) , Banh Mi sandwich, grilled meats, stir-fry. Manage the grill, wok, broth, and banh mi stations. Train and guide Commi 2 chefs. Make sure food is served fast, consistent, and high-quality even during rush hours. Keep the kitchen and your station very clean and hygienic. Check stock of meats, noodles, herbs, sauces every day. Taste dishes with Chef Ly before service to ensure flavors are correct. Growth: Learn advanced Vietnamese cooking techniques (broth, grilling, pickling, frying). Can grow into Kitchen In-charge or Head Chef roles. 2. Commi 2 Chef (Junior Line Cook) Role: Support Commi 1 and help prepare ingredients and dishes. Main Duties: Cut herbs, marinate meat, prepare noodles, sauces, and condiments. Help with broth, garnishes, and stock preparation. Assemble spring rolls, salads, and starters. Assist in banh mi station. Cook small dishes like fried rice or stir-fried noodles during busy times. Maintain strict cleanliness and hygiene standards.
